The latest menu at its original Barcelona site is called Mysteries of the World and features a wide range of cocktails in the elaborate house style of Paradiso, with extravagant drinking vessels and flamboyant garnishes.
Supercool Martini
The Supercool Martini sits in The Classics section of Paradiso’s current menu, having first been developed by Giannotti in 2019. The cocktail is made using a technique called ‘supercooling’, which keeps distillate water in liquid form below 0° and when it touches the frozen olive it turns into ice in the form of a stalagmite.
This interpretation of a classic Dry Martini is arguably the most famous drink to come out of Paradiso since the bar was first opened in 2015.
Paradiso white truffle gin, mustard seed vermouth, supercool water, grapefruit peel, olive
Technique: Supercooled water is poured over a frozen olive to create a stalagmite of ice, which is then diluted with atomised vermouth previously macerated with mustard seeds. Paradiso’s white truffle gin, chilled to -22°, is stirred in to finish the Martini, which is perfumed with the essential oils of grapefruit peel.

Vodka infused with pinecones, red fruits cordial, pine mead, lemon, agave honey
